Just picked the last tomatoes out of my garden yesterday! I have tons! I was wondering, does anyone have any favorite recipes for tomatoes that freeze well? I don't like to can, but I need to do something with them!

How about just making a WHOLE bunch of tomato sauce?  We do this, and just use it on everything.  We make a lot of pasta in this house, though!

Another great recipe we like is Tomato Basil Soup.  I love it because it is creamy, without using cream or milk:

Freezing really doesn't work well when it comes to raw tomatoes.  Normally, they should be stewed (blanched) first.

They are a fruit, so I would recommend making sauce if they are the plum variety, or salad with dinner every night for the next couple weeks.

What I really have a taste for is fresh tomatoes sliced up, with chopped yellow onion and kidney beans.  Throw in a little basil if it suites your taste, with olive oil and your choice of white, or Balsamic vinegar.

Also, they are nice when broiled "on the half rind" with your choice of toppings, such as fresh mozzarella cheese.

 I have also been known to eat them like an apple, with a sprinkle of Himalayan, or sea salt.

I've even been known to make homemade ketchup.

Of course, there's always the local soup kitchen...

One of the best italian reciepes I've had is penne rustica. You could try to do a lot of different pastas. The beauty of italian food is while it all maybe pastas none of them are the same haha.

roasted tomatoes , Slice tomatoes in half and put in a foil lined baking dish, pour enough oil over them to cover the bottom about 1/4 of an inch ,slice fresh garlic over them(as much as you like), sprinkle with sugar lightly and drizzle with balsamic vinegar, roast at 350 till brown. Sooo good with good bread for dipping, good cheese and a bottle of wine. The leftovers make a great salad dressing and can be frozen also

Because tomatoes have so much liquid in the fruit it is difficult to freeze them.  When I was younger I would help my grandparents can the juice and they would use it for various things throughout the year including a few that have already been mentioned (pasta sauce, soup, etc).  While this may be a little extra work it might not be a bad idea for at least a portion of your crop.

Tomatoes freeze just fine, blanch them in boiling water until the skin is loose, then slide the skin off.  Put on a flat surface like a cookie sheet then freeze for 3-4 hours. Place in zip lock bags and put back in the freezer. Take out as many as you need at the time.  We are just getting to the end of the ones we froze last year,

The cherry tomatoes are good bite-sized treats, too.

There also a little less messy than their larger cousins.

That was a crazy cult classic type movie much like the Rocky Horror Picture Show. If you liked it you liked it if you didn't you didn't. There was really no in between.
