Suprisingly, decent rum is pretty popular down in South Jersey. It's nice to see someone from Bucks on here =P, I'm orginally from Bristol.

I'm not a huge fan of rum, but I loveeeee bananas foster. It's super yummy. And I admit that I'm quite fond of Capt. Moron Parrot Bay rum with pineapple juice. I'll have to give some better rum a chance one day. Maybe I'll find that I do like it after all.

RUM!

IMHO, one of the most misunderstood and often disrespected spirits in the American spirit world. Made for the 'waste' of sugar production, the syrup is distilled down to the lovely elixir that is RUM! I prefer a rum that has been aged and is enjoyed neat or with one or two rocks. I've also been known to have it with tonic and a lime and lately mixed with Reed's Extra Ginger Beer. YUM!

Rum is also fantastic when used in cooking. Obviously there is Bananas Foster, king of desserts in my opinion. The flambe of rum at the end and the delicate sweetness that it brings to the sauce is near heaven. It is a fabulous marinade ingredient with pork and chicken, perhaps I will post a recipe sometime soon if there is any chatter on this topic.

Bottom line, get beyond the Bacardi and Captain Moron (yes Moron...drink enough and you'll act like one!) Discover the rums that have been being made for centuries: Mount Gay, Appleton, Zaya, Pyrat, Cruzan to just name a few that are easy to find. Get a decent lo-ball glass, pour a shot, swirl, taste, breathe. Add a rock(ice cube) and taste again. Changed in flavor didn't it? Which do you prefer? Neither. Try tonic and lime, then a dash of bitters. Now you are in the islands mon! Enjoy discovering this very old sprit, but as always, do it responsibly. As a chef I say to, "Eat Well or Don't Eat At All" the same applies to drinking, "Drink Well, or Don't Drink At All"

Cheers!

Chef Theo
